From the package: "Cape Cod Whole Earth Collection Sea Salt Popcorn is made from the highest quality, best tasting popping corn on earth. We diligently research and test our popping corn from a variety of farms, just as we do for our potatoes, to ensure we receive the best kernels year round. Most dried corn will pop if heated, but our premium popping corn comes from specialized kernels designed to have a maximum puff size and a small hull (the hard triangular part at the end of the kernel). Popcorn has long been a part of New England history, and has been used for everything from jewelry to breakfast cereal. It was even part of the first Thanksgiving in Plymouth (less than 40 miles from our factory on Cape Cod), when the brother of a the Wampanoag chief offered popcorn in a deerskin bag to the Pilgrims as a token of friendship. Continuing in that tradition, we make an all natural popcorn without any preservatives. First, in a small popper, we hot air pop our corn to allow close supervision throughout the popping process. Air popping creates a very tender, light popcorn with a pronounced corn flavor. In the popper, the kernels are carefully rotated to avoid scorching, and a sifting tumbler removes all the small parts. Once out of the tumbler a coating of sea salt is applied. Finally, we test a sample from each finished batch of Cape Cod Sea Salt Popcorn before we package it."
